s’more the better!

I can still remember my first S’mores. I was  about eight years old. My mom was asked to be a Girl Scout camp counselor and she agreed only if I could tag along as the camp mascot. Sitting around the campfire that first night, I almost made myself sick on the deliciously oozing-melted-marshmallow-chocolate-graham cracker sandwich… that’s what I called it. I was forever hooked on this delectable treat! Since today is National S’more Day (how cool is that?!), I thought I’d try my hand at S’more Crumble or a S’more Cookie Bar… you choose!

Ingredients:

  • 1-1/2 cups graham cracker crumbs
  • 1 stick melted butter
  • 3 Tbsp sugar
  • 2 cups milk chocolate chips
  • 1 jar marshmallow cream

Crumbled topping:

  • 1/4 cup flour
  • 3/4 cup graham cracker crumbs
  • 1/2 cup softened butter
  • brown sugar
  • 1/4  cup pecan chips

Combine first three ingredients, press down in 9×13 baking dish. Bake 10 minutes at 350F, then cool completely. Cover crust with a layer of milk chocolate chips, add marshmallow cream in dollops over chips.

Make crumble, sprinkle to cover. Bake at 375F for 25 minutes.

Spoon into parfait glasses while still warm for a S’more Crumble.

 Or let the dish cool completely and cut into S’more Cookie Bars.

S’more trivia from Wikipedia: “S’more appears to be a contraction of the phrase, “some more.” While the origin of the dessert is unclear, the first recorded version of the recipe can be found in the publication “Tramping and Trailing with the Girl Scouts” of 1927.[2] The recipe is credited to Loretta Scott Crew, who reportedly made them by the campfire for the Scouts.[3] It is unknown whether the Girl Scouts were the first to make s’mores, but there appears to be no earlier claim to this snack. Although it is unknown when the name was shortened, recipes for “Some Mores” are in various Girl Scout publications until at least 1973.”
